3 egg omelette
organic pasture-raised eggs
a filling of your choice such as a few chopped mushrooms, chopped tomato or spinach
organic cheddar cheese
salt and pepper to taste
Prepare the filling for e.g. fry one large chestnut mushroom and one medium-sized tomato in a bit of butter until it's nice and soft, then set aside.
Break the eggs into a bowl and thoroughly mix with the milk using a fork or whisk. Season with salt and pepper.
Over medium heat, melt the butter in an omelette pan and add the egg mixture. Put the lid on for a few minutes until the egg is set on top.
Next, sprinkle the egg with the prepared filling and cheese. Fold the omelette in half by flipping one side of over the other to look as pictured. Serve with toast and your favourite condiments.
