water
2tbspvinegar
salt and pepper to taste
Instructions
Fill a small saucepan with 3/4 of water and bring to a slow simmer.
Crack the egg into a bowl, and add the vinegar to the water.
Use a spoon to stir the water, creating a whirlpool or vortex in the middle.
Slowly slide the egg into the middle of the vortex and let it spin for a few seconds. Once the egg starts to set, use a spoon to move the egg slightly making sure it doesn't stick to the bottom of the pan.
Let the egg simmer for a few minutes until the yolk is to your liking. A guide is roughly 3 minutes for a very runny egg and roughly 4 minutes for a yolk with a bit more structure. Cooking time will depend on the temperature of the water so use this as a guide. Once the egg is cooked remove with a slotted spoon and season with salt and pepper.
